Easy Double Strawberry Cupcakes for Spring
I don’t make desserts very often.
Now, eating desserts? Absolutely. I definitely have a sweet tooth. But when it comes to actually baking them, I usually lean toward simpler recipes or just let someone else make them entirely. 😅
Still, I wanted to try something that really felt like spring, and these double strawberry cupcakes immediately stood out to me. And honestly, anything strawberry related is almost guaranteed to catch Ben’s attention since strawberries are his absolute favorite fruit.

Why I Chose This Recipe
I was looking for something:
- light
- seasonal
- a little different from the dinners I normally review
These felt very “spring dessert” to me, and I liked that they seemed approachable even for someone who doesn’t bake very often.

How It Was to Make
Surprisingly easy. As someone who does not consider herself a baker, I didn’t find this recipe overwhelming at all.
The steps were straightforward, everything came together pretty smoothly, and it felt manageable from start to finish. Which honestly made me more willing to try baking again in the future.

How They Turned Out
I really liked the frosting on these. It had great strawberry flavor and felt light and fresh without being overly sweet. The cupcakes themselves, though, were a little dry for me.
Family Review
Paul: Thought they were slightly dry, but clearly still enjoyed them enough to keep going back for more as he ate about half a dozen.
Ben: Mostly just licked the frosting but said he liked them, which honestly feels like a very kid review of cupcakes.
Charlotte (toddler): Had a few little bites herself.

Final Thoughts
Even though I’m personally more of a chocolate dessert person, I still think these were a fun recipe to try for spring.
They were:
- easy to make
- pretty approachable for non bakers
- had a really good frosting
I don’t know if these would become my go to dessert recipe, but I’d definitely keep them in the back of my mind for a spring gathering or strawberry themed dessert table.
And if nothing else, apparently they passed the “Paul ate six of them” test 😂

Simple Spring Kitchen Rhythms for Busy Moms
Lately I’ve realized I’m not in a “perfect routine” season when it comes to cooking. With little kids, changing schedules, and just everyday life, things don’t always go the way I planned and honestly, I’ve stopped trying to make them.
Instead, I’ve been leaning into simple kitchen rhythms. Not strict meal plans or complicated prep systems.
Just small habits that are making feeding my family feel a little easier right now.

Keeping Meals Simple (Especially Dinner)
This has probably been the biggest shift. Instead of trying to make something new or elaborate every night, I’ve been sticking with meals that are quick, easy, and don’t require a lot of thinking.
Things like:
- simple pasta dishes
- tacos
- quick skillet meals
Some nights are more put together than others, but the goal right now is just getting something on the table without stress.
Having a Few “Go To” Meals on Repeat
I used to feel like I needed more variety, but right now, having a handful of meals I know work has been a lifesaver. Meals I don’t have to think about and know the kids will at least kind of eat.
It makes grocery shopping easier, cooking faster, and takes away that “what am I making tonight?” feeling.

Letting Lunch Be Easy
Lunch is not the time I’m trying to be creative.
Most days it’s:
- leftovers
- something quick
- or a simple mix of whatever we have
And that’s been working just fine. Not every meal needs to be planned or impressive.
Keeping Ingredients Flexible
Instead of shopping for very specific recipes, I’ve been buying ingredients that can work in multiple meals.
Things like:
- ground beef
- chicken
- pasta
- tortillas
- simple fruits and veggies
That way, if plans change (which they usually do), I can still put something together without starting from scratch.
Cooking Based on Energy Levels
This has been a big one for me. Some nights I have the energy to cook something a little more involved. Other nights? Not even close.
So instead of forcing it, I’ve been matching meals to my energy:
- higher energy = try something new or a little more involved
- low energy = super simple, quick meals (and let’s just say we’re really putting some miles on our new air fryer on those days)
It’s taken a lot of pressure off.

Not Overcomplicating the Kitchen
I’m not doing big prep days or cooking everything from scratch. I’m just doing what works for this season.
Sometimes that means:
- shortcuts
- simple recipes
- or repeating the same meals more often than I used to
And honestly, it’s made cooking feel a lot more manageable.
What’s Actually Making the Difference
None of this is complicated. But these small shifts have made:
- grocery shopping easier
- cooking less stressful
- and mealtime feel a little more doable
And right now, that’s exactly what I need.

What Easter Really Looks Like
Easter always feels like it should be one of those picture perfect holidays. Matching outfits. Beautiful baskets. A calm, meaningful morning focused on what the day is really about.
And while there are little moments of that, most of the time, it looks a lot more like real life.
This year feels a little extra special for us, too. It’s Charlotte’s first “real” Easter. Last year she was only three months old, so everything felt more like a blur than a memory.
And while I’d love for it to be slow and meaningful and perfectly captured, I know it will probably look a lot like this instead.

The Night Before
In my head, I’m preparing everything early, setting out baskets, and going to bed on time.
In reality, I’m:
- Filling Easter eggs way too late at night
- Realizing I forgot something small but important
- Trying to keep everything quiet so no one wakes up
It’s a little chaotic but also kind of fun in its own way.
The Easter Baskets
I always imagine this sweet, slow moment where the kids come out and gently look through their baskets. What actually happens?
It’s:
- Excitement
- Wrappers everywhere
- Immediate requests to open everything
Charlotte will probably just grab whatever she can reach first, and Ben will be all in until something isn’t exactly what he expected 😅
It’s not calm but it’s definitely memorable.
Getting Ready for Church
This is probably the part that looks the most put together from the outside. But behind the scenes?
- Someone doesn’t want to get dressed
- Someone spills something
- I’m trying to get everyone ready while also getting ready myself
And somehow, we still make it out the door.
Not perfectly, but we make it.
Remembering What Easter Is About
In the middle of all the chaos, this is the part I try to hold onto the most. Easter isn’t about getting everything right. It’s not about perfect traditions or perfectly behaved kids.
It’s about Jesus.
It is all about the sacrifice, the love, and the hope that came from the resurrection. And right now, in this stage of life, that doesn’t always look like a long, quiet devotional moment.
Sometimes it looks like:
- A quick conversation while getting shoes on
- A simple explanation in words my kids can understand
- A reminder to myself in the middle of the noise
It may feel small, but it still matters.
The Rest of the Day
The rest of Easter usually looks like:
- Family time
- Good food
- Kids coming down from sugar highs
- A house that somehow gets messy again
It’s full. A little loud. A little chaotic. And very real.

What Easter Actually Is
It’s not perfect. It’s not always calm. And it definitely doesn’t look like the picture in my head.
But it is:
- Joyful
- Meaningful
- Full of grace
Because at the end of the day, Easter isn’t about how well I pulled everything together. It’s about what’s already been done for us.

If your Easter doesn’t look picture perfect this year, you’re not doing it wrong. In this season of life, meaningful doesn’t always look quiet or put together.
Sometimes it looks like:
- Sticky hands
- Half finished conversations
- And moments of truth squeezed in between the chaos
And that’s enough. Because even in the middle of all of that, the meaning of Easter is still there. Jesus is alive!

Simple Spring Kitchen Reset (No Pantry Overhaul Needed)
After months of heavy meals, holiday baking, and all the cozy comfort food, my kitchen always starts to feel a little tired. The same meals on repeat. Heavier ingredients. And honestly, a lot less motivation to cook anything new.
So instead of doing a full pantry overhaul or trying to reinvent everything overnight, I like to do a simple seasonal reset. Just enough to make cooking feel a little lighter again.
This isn’t a picture-perfect kitchen transformation. It’s just a few small shifts that help our home move from winter into spring in a way that actually fits real life.

What a Kitchen Reset Actually Means
For me, this doesn’t mean deep cleaning every cabinet or throwing everything out and starting fresh.
It just means taking a step back and asking:
What’s been working?
What feels heavy or overdone?
And what would make this space feel fresh again?
Sometimes the smallest changes make the biggest difference.
Lightening Up the Space (Without Redecorating Everything)
I don’t redecorate my kitchen for every season, but I do like to make a few small changes that make it feel a little more alive.
That might look like:
- Swapping out a centerpiece for something simple like a bowl of lemons
- Adding a small plant or fresh flowers to the counter
- Clearing off one cluttered surface that’s been collecting everything all winter
Nothing big. Nothing expensive. Just enough to make the space feel lighter and a little more like spring.
A Mini Pantry Reset (Not a Full Overhaul)
Instead of pulling everything out and organizing every shelf, I keep this really simple.
I’ll:
- Toss anything expired or clearly not getting used
- Take note of what we actually relied on all winter
- Make a little room for things that feel lighter and easier to cook with
This usually means adding in a few basics like:
- Simple pasta and rice
- Tortillas for easy meals
- A couple lighter sauces or dressings
It’s less about having a perfectly organized pantry and more about setting myself up for meals that don’t feel so heavy.

Shifting Ingredients for Spring Cooking
This is where I really start to notice a difference.
In the winter, I naturally reach for:
- Creamy sauces
- Slow cooker meals
- Heavier, comfort style dishes
And while I’m not giving those up completely, I do start to shift toward ingredients that feel a little fresher.
Things like:
- Fresh fruit (especially for snacks and quick sides)
- Simple vegetables like green beans, carrots, or salad mixes
- Chicken and ground beef for quick, versatile meals
- Basic seasonings and herbs that add flavor without heaviness
We’re not suddenly becoming a “light meals only” family, but adding a little freshness back into our meals makes a big difference.
The Kind of Recipes I Start Reaching For
This time of year, I notice I naturally gravitate toward meals that are:
- Quick to make
- Not too heavy
- Kid friendly
- And don’t leave me standing in the kitchen forever

Some of the meals I keep coming back to this time of year are:

→ A great way to use up simple vegetables while keeping dinner easy and family friendly
These are the kinds of meals that make cooking feel manageable again after a long winter of heavier dishes.
And honestly, they’re the ones I’m most excited to get back to.

What I’m NOT Doing This Season
I think this part matters just as much as everything else.
I’m not:
- Deep cleaning every inch of my kitchen
- Switching to all “clean eating” meals
- Cooking everything from scratch every day
- Or trying to create a perfectly aesthetic space
This isn’t a full reset. It’s just a gentle shift into a new season.
If your kitchen has been feeling a little stuck in winter mode, you don’t need to overhaul everything to fix it. Sometimes it’s just:
- A cleared counter
- A few lighter ingredients
- And a couple simple meals that feel fresh again
That’s enough to make cooking feel a little easier, and a little more enjoyable, as we head into spring.
