Easy Homemade Hamburger Helper (One Pot Family Meal)
This One Pot Hamburger Helper recipe ended up being such a good addition to our dinner rotation and honestly, it checked a lot of boxes for me right now. It is quick, easy and all in one pot. Which, in this season of life, is exactly what I’m looking for.

Paul: Very skeptical about the zucchini at first but he admitted he couldn’t taste it at all and ended up having two bowls.

Ben: Initially said he didn’t want it then proceeded to eat mine. So I think that says everything.

I did make one adjustment: I left out the mushrooms. We are just not a mushroom household, and this recipe worked perfectly fine without them.

✔️ Paul’s Verdict: Loved it. This is one of his usual takeout orders, and he was so happy to have a homemade version. His only complaint? That I didn’t also make sweet and sour chicken and rice to go with it 🙄😂
✔️ Ben’s Verdict: Tried a bite, but wasn’t a fan. I think the wontons themselves were a little too “different” for him, which is very on brand for a 3 year old.
✔️ Charlotte’s Verdict: Didn’t try this one.
✔️ Overall Verdict: A big win for Paul, a solid “like” from me, and a pass from the kids this time.

Let me start by confessing something: I am not a chili girl. I don’t like beans (a texture thing, please don’t come for me), and if given the choice, I will pick a good taco soup every single time.
But I had a quiet night at home with no toddler, and I wanted something warm and comforting to kick off the colder weather. I’d never made white chicken chili before, so I decided to try this popular version: White Chicken Chili from The Recipe Rebel.
And honestly? I surprised myself.

How the Recipe Went (Reality Check Style)
The recipe is super straightforward. As in dump, simmer, stir, done. For a weeknight dinner, that is my love language.
