Breaking In the New Grill with Ribeyes and Potatoes
Every month, Paul gets to choose a recipe for me to review. Usually that means he picks a specific meal, challenges me to make something new, and then enjoys giving his official opinion afterward.
This month, however, he had a different idea. Instead of choosing a recipe, Paul chose a cooking method. Specifically, he chose his new grill.
And honestly? I think we may have accidentally unlocked a whole new category of recipe reviews.

The Father’s Day Gift That Started It All
For Father’s Day this year, Paul got a new grill. Naturally, he wanted to use it as soon as possible.
I can’t say I blame him. There’s just something about a new cooking gadget that immediately makes you start planning meals around it. And since this month’s Paul’s Pick landed right after Father’s Day, it felt like the perfect excuse.

This Week’s Menu
The inaugural official grill dinner was simple:
- Ribeye steaks
- Grilled potatoes
No complicated recipe. No long ingredient list. Just good ingredients cooked well. Sometimes that’s all you need.

How It Turned Out
The steaks were fantastic.
The potatoes were simple, flavorful, and paired perfectly with the ribeyes.
It’s hard to give a traditional recipe review when there wasn’t really a recipe involved, but the meal itself absolutely delivered.
More importantly, Paul had a great time making it.
A New Kitchen Role for Paul
One thing I’ve always appreciated about Paul is that he supports this blog even when it means regularly eating whatever recipe I’ve decided to test that week.
He’s my taste tester, my second opinion, and occasionally the person reminding me that maybe not every vegetable needs to be mixed into the same dish.
Now, with the grill, he has officially added another role:
Grill Master.
Since getting the grill, he’s already made:
- burgers
- chicken
- ribeyes
And I have a feeling this is only the beginning.

What This Means for Future Reviews
One thing that excited me about this dinner was realizing how many possibilities the grill opens up.
Up until now, most of my reviews have come from:
- slow cookers
- casseroles
- skillet meals
- pasta dishes
- oven recipes
Now? We suddenly have a whole new category to explore:
- Grilled chicken
- Grilled vegetables
- Burgers
- Kabobs
- Steaks
And whatever else Paul decides sounds like a good idea.
I have a feeling the grill is going to make quite a few appearances on the blog this summer.
Family Review
Paul: Very pleased with both the meal and the fact that he got to use his new grill.
Charlotte (toddler): Enjoyed some potatoes and happily joined us for dinner.
Ben: Was much more interested in being outside than providing an official food review, which honestly feels appropriate for summer.
Me: Happy to eat a good steak and excited about the future grilling possibilities.
Final Thoughts
This month’s Paul’s Pick ended up being a little different than usual.
There wasn’t a recipe card or a rating. There wasn’t even much measuring.
Instead, it became something better. A reminder that some of our favorite meals aren’t necessarily complicated.
They’re the meals shared with family, especially when someone is excited to cook them.
And if this dinner is any indication, I think we’re entering our grilling era. Which should make for some fun future reviews.

Homemade Chicken Chow Mein Recipe (Easy Takeout Inspired Dinner)
It’s time for another Paul’s Pick and this month he chose a homemade chicken chow mein recipe from one of his favorite online chefs, Justin Holmes.
And honestly? This ended up being a really solid quick dinner option.

Why Paul Chose This Recipe
Paul loves Asian takeout flavors, so this recipe immediately caught his attention.
The version we used isn’t actually written out on the creator’s website. It’s only available as a video, but it looked simple, quick, and perfect for a weeknight dinner. Which, lately, is exactly the kind of recipe we’ve been needing more of.
How It Was to Make
This recipe was very easy to throw together. Prep, cook, and eating all happened within about 15–20 minutes, which automatically makes this feel like a win in my book.
There weren’t any complicated steps, and everything came together quickly without making a huge mess in the kitchen.

How It Turned Out
Overall, we both really liked it. It had that comforting takeout style noodle feel while still being lighter and homemade.
For me, the only thing I’d change next time is adding something spicy. As someone who always orders spicy dishes when we get Asian takeout, I felt like it needed a little heat. But flavor wise, it was still really good.
Family Review
This one definitely had mixed kid reactions.
Paul: Big fan. He had two bowls. His one complaint was that it “didn’t taste unhealthy enough,” which honestly made me laugh. Would probably add extra sauce or something slightly more indulgent next time.
Charlotte (toddler): Mostly focused on the noodles, which honestly felt expected.
Ben: Not a fan. According to him, the noodles were “too squishy,” which both Paul and I were very confused by. Some days I really miss the phase where he would just happily eat whatever I made.

Final Thoughts
This is definitely one I’ll keep in the back of my mind for quick weeknight dinners.
It’s:
- fast
- easy
- filling
- and comes together with very little effort
And while it may not have been a hit with everyone in the house, it still felt like a solid addition to our meal rotation. Especially for nights when I need something quick and maybe when Ben isn’t home.

Easy Wonton Soup Recipe for Busy Weeknights: Paul’s Pick
Every month, Paul tries to pick something that will challenge me in the kitchen, but this time, he went a little easier on me.
He chose Wonton Soup, which is one of his go-to orders from our local Chinese takeout. His goal? Find a version we could make at home that still hits those same comforting, takeout style flavors.
And honestly, this one delivered in a way I didn’t fully expect.
Wonton soup sounds like one of those recipes that would be complicated, but this was actually very simple to put together. Once everything was prepped, it came together quickly and easily, making it a great option for a weeknight when you want something warm and comforting without a lot of effort.
I did make one adjustment: I left out the mushrooms. We are just not a mushroom household, and this recipe worked perfectly fine without them.
Overall, this felt like a great way to get those takeout style flavors at home without the price tag, which is always a win.

The Taste Test: A Clear Winner for Paul
This was definitely one of those meals where the reactions around the table varied a bit.
Family Taste Test
✔️ My Verdict: I liked it. It’s not my all time favorite soup, but it was still enjoyable and I can absolutely see the appeal.
✔️ Paul’s Verdict: Loved it. This is one of his usual takeout orders, and he was so happy to have a homemade version. His only complaint? That I didn’t also make sweet and sour chicken and rice to go with it 🙄😂
✔️ Ben’s Verdict: Tried a bite, but wasn’t a fan. I think the wontons themselves were a little too “different” for him, which is very on brand for a 3 year old.
✔️ Charlotte’s Verdict: Didn’t try this one.
✔️ Overall Verdict: A big win for Paul, a solid “like” from me, and a pass from the kids this time.

Final Thoughts
This is one of those recipes that really shines if you’re looking to recreate takeout favorites at home.
It’s simple, comforting, and comes together quickly, making it a great option for a weeknight dinner when you want something a little different.
While it may not be a full family favorite in our house, it’s definitely earned a spot as a “Paul’s Pick” repeat, especially for nights when I want to make something I know he’ll really enjoy.

Trying Authentic Italian Braciole for the First Time | Paul’s Pick
This month’s Paul’s Pick definitely pushed me out of my comfort zone.
He chose Authentic Italian Braciole, something I had never made before and, honestly, something that looked a little intimidating at first glance. Thin slices of beef, rolled up with filling, simmered in sauce? It felt like a project.
But once I got started, it was actually much easier than I expected.

How It Came Together
The process is simple: pound the beef thin, layer on the filling, roll it up, secure it, and let it slowly simmer in sauce until tender. It looks impressive, but it’s very doable.
I chose to serve it over spaghetti tossed in the same sauce the meat cooked in, which felt like the perfect way to soak up all that flavor.
It definitely felt like a “Sunday dinner” kind of meal. The kind you take your time with and enjoy at the table.

The Reviews
Paul: Loved it.
He said it was like a cross between a steak and a meatball, which honestly feels like a pretty accurate description. He went back for more and was very pleased with his pick.
Me: I liked it, especially the filling. That part was packed with flavor. I did find the beef itself just a bit dry for my personal taste, even with the sauce. Not bad at all, just not my favorite texture.
Ben: Took a bite but wasn’t overly interested.
Charlotte: Happily ate her noodles, but the beef is still a little advanced for her at this stage.
This one feels very much like an adult dinner. I wouldn’t necessarily add it to our regular rotation, but I would absolutely make it again when I want to do something special for Paul.

And honestly? That’s what Paul’s Pick is all about. ❤️

Paul’s Pick: This Homemade Doner Kebab Is Surprisingly Simple
Every month, Paul gets one official say in what we’re making and this time, he chose a recipe that definitely leaned into his current mission of “let’s challenge Erin in the kitchen.” This month’s Paul’s Pick was a Homemade Doner Kebab from Meals with Max, and I’ll admit, I wasn’t quite sure what I was getting into when I first watched the video.

As it turns out, this recipe was surprisingly simple in the best way.
The process starts with grating an onion, then adding it to the blender with ground meat and spices. The recipe calls for lamb or beef, and I went with beef simply because it’s much easier to get where we live. Everything gets blended until combined, rolled thin onto parchment paper, rolled up, and baked in the oven.
That’s it. No complicated steps. No intimidating techniques. And somehow, it all comes together into something really flavorful.
In full transparency, I did end up having to use flour tortillas because the pita bread I bought started getting moldy before I was ready to use it. Oops…

Recipe Reality Check
One of my favorite things about this recipe is how approachable it felt. Once everything was blended, the rest was very straightforward. I’d comfortably call this a 30-minute meal, making it a great option for nights when you want something homemade but don’t want to spend forever in the kitchen.
It is definitely on the spicy side. I personally enjoyed that, but it’s something to keep in mind if you’re sensitive to heat. The spice level is bold, but not overwhelming and very easy to adjust if needed.

Paul’s Pick Verdict ✔️
- Paul: Loved it. He was genuinely excited that this was his pick for the month and was surprised by just how flavorful the meat turned out. His biggest recommendation? Add a sauce. He paired his with sweet chili sauce and fully stands by that choice.
- Me: I really enjoyed how easy this was while still feeling a little adventurous. It checked the boxes of fast, flavorful, and flexible which is always a win.
- Ben: Not home for this one. If I were making it for him, I’d definitely adjust the spice level or even change up the seasoning depending on my mood.

Would I Make It Again?
Absolutely. This is officially going on our repeat list. It’s fast, flavorful, and incredibly customizable with different sauces, toppings, spice levels, or even protein choices.
It’s also the kind of recipe that feels like a small win: something new, a little challenging, but very doable. Even better? Paul got his challenge recipe and I passed with flying colors 😉
Final Verdict: A successful Paul’s Pick that was simple, bold, and worth repeating.

Loaded Potato Soup Review: Rich, Cozy, and Worth the Hype
This week’s recipe is a little different because I didn’t pick it. This marks the very first Paul’s Pick, a recipe my husband specifically asked me to try after watching a new content creator he’s been into lately. With the temperature stuck in the teens and soup season in full force, this loaded potato soup felt perfectly timed. Easy to make, ultra comforting, and unapologetically rich, this soup ended up being a big hit. Especially with Paul, who may or may not have eaten almost three bowls.

Why This Recipe Was Different
This week’s recipe came with a specific request from Paul, which officially makes this the first ever Paul’s Pick here on Recipe Reality Check.
He recently started watching Justin Holmes on YouTube and asked if I’d try one of his recipes. Between that and the fact that the temperature outside wasn’t climbing out of the teens, soup felt like exactly the right move. So on a cold winter night, with no toddler at the table and plenty of time to simmer something cozy, I gave it a go.
What This Soup Actually Is
Let’s clear something up right away. This is not just a typical potato soup. It’s got chunky potatoes, bacon, a creamy and rich broth and plenty of Velveeta cheese to tie it all together
Think: comfort food soup that feels filling and indulgent.

How It Went (Real Life Version)
This recipe was very easy to prepare, which is always appreciated when it’s cold enough outside that leaving the house feels offensive. I did prepare the bacon ahead of time.
The steps were straightforward, nothing complicated or fussy, and the soup came together without me needing to babysit it the entire time. It smelled incredible while cooking rich, savory, and very “this will be good” energy.
The Velveeta added a really nostalgic flavor for me. Growing up, their shells and cheese was one of my favorites, and that familiar taste came through in the best way possible. Comfort food in the truest sense.
The Taste Test
This one was a clear hit.
- Me: I really enjoyed it. Creamy, hearty, and satisfying without feeling boring. The potatoes and bacon give it texture and substance, so it doesn’t feel one note.
- Paul: Loved it. Had about two and a half bowls, declared it a new favorite and then admitted he probably wouldn’t eat quite that much next time because it is very rich.
- Ben: Not home, so no toddler review this week but honestly, that might have helped Paul get seconds and thirds.
Final Verdict
This loaded potato soup is absolutely going into our soup rotation.
It’s easy, comforting, and perfect for those brutally cold days when you want something warm and filling without a lot of effort. The richness means it’s probably not an every week soup, but as a cozy winter meal? It’s a winner.
And honestly, if this is the standard for Paul’s Picks, I’m not mad about it.
